Old-Fashioned Oatmeal with Coconut, Dried Cranberries and Raisins
Creating meals that replenish for your kids means getting it right from the start. And that means starting off each day with a good and tasty breakfast. This recipe was inspired by one of our junior food editors, Darian Davis, whose mother whipped up a similar recipe for him as he headed out the door for a long day at school. I added a couple of twists to an already great recipe and you and your kids are going to love it. And here’s a bonus, you can throw this in the crock pot the night before and wake up to a good and healthy breakfast.
Ingredients:
- 2 cups old-fashioned oatmeal
- 2½ cups almond milk
- 1/8 teaspoon kosher salt
- ½ cup sweetened flaked coconut
- ½ cup dried cranberries
- ½ cup yellow raisins
Technique:
Combine oatmeal almond milk and kosher salt in a crock pot, stirring well. Place lid on pot and set temperature on low. Cook overnight.
Upon rising the next morning, increase temperature to high. Add raisins, coconut and cranberries and a little brown sugar; stirring to combine. Cook for three to five minutes. Spoon into bowls adding a pat of butter or yogurt spread (Brommel & Brown). If desired, add additional almond milk to individual bowls.
